Savory Roast Chicken
I cook with love, garlic, and not enough measuring cups.
Ingredients:
1 whole chicken, spatchcocked
2 Tbsp extra virgin olive oil
4 Tbsp Peas Love & Carrots House Blend
Cooking steps
Step 1
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Step 2
Add chicken to the pan, breast side up, and use your palms to apply pressure to the breast bone until it cracks.
Step 3
Add olive oil and spices. Rub well on both sides of the chicken, making sure to push some under the skin as well.
Step 4
Place in the oven, uncovered, for 45–60 minutes.
Step 5
Serve and enjoy!
