Salmon Tacos

Salmon:
1 (25 cm) piece of salmon
2 Tbsp olive oil
¼ cup Maggie Loves Tacos Spice Blend

Slaw:
3 cups shredded purple cabbage
3 limes, juiced (3 Tbsp)
2 Tbsp olive oil
2 tsp honey
1½ tsp kosher salt

Place everything in a bowl. Mix to combine.

Sriracha Lime mayo:

½ cup mayonnaise
¼ cup sriracha
¼ cup lime juice
2 tsp kosher salt

Place everything in a bowl and mix to combine.

For the tacos:
Corn tortillas, lightly charred over open flame
2-3 radishes, thinly sliced
1 Avocado (we didnt have any good ones, but if you do you should use it!), thinly sliced
1 cup cilantro leaves

Assemble:
Grab a tortilla and pile it up! Its that easy.
Alternatively, skip the taco and make a salad using there cabbage as the base!

Ingredients:

Cooking steps

Step 1
Preheat oven to 200ºC (400ºF)
Step 2
Place salmon on a parchment lined baking sheet.
Step 3
Drizzle olive oil over salmon and sprinkle spice blend over the top.
Step 4
Gently rub into the salmon. Allow to sit for exactly 10 minutes.
Step 5
Place in the oven and bake for 25-30 minutes.
Step 6
Remove from oven and allow to cool for a few minutes, then gently flake into 1 inch pieces o add to tacos.
